Sopaipillas

Sopaipillas

 

 

1 tsp. baking powder

1/2 tsp. salt

3 tbsp. Butter

1/2 tsp vanilla

¾ cups hot water

2-3 cups vegetable oil

 

For the razzle dazzle:

3 tbsp sugar

1/4 tsp. ground cinnamon

honey

 

 

Whisk together the flour, salt, and baking powder in a large bowl.

Cut in the butter using a fork or your hands.

Pour the hot water into the bowl and work it together to form a dough.

Place the dough on a lightly floured countertop and knead it for about 4-5 minutes until smooth. Form into a ball and place it back in the bowl. Cover with a plastic and let it rest for 30 mins.

Heat the oil in a large pot or deep fryer until 350. You want at least 2-3 inches of oil to leave room for the sopaipillas to puff below the surface.

Remove the dough and flatten a bit before cutting into quarters.

Roll the 4 pieces of dough into balls. Using a rolling pin (or even wine bottle) roll each ball into a round disk.

Cut each disk into four triangles. One at a time, place each one into the oil making sure not to include more than four at a time. Cook 2-3 minutes on each side or until golden brown.

Once done, remove from the oil and let drain on a wire rack 1-2 mins.

Drizzle with some honey, toss and then sprinkle with the cinnamon sugar. Serve them thangs warm.
