Bananas Foster Cinnamon Rolls

Ingredients

 

½ cup melted butter

2 cups warm milk

½ cup sugar

1 packet active dry yeast

5 cups flour

2 tablespoons malted milk

2 ripe bananas, mashed

1 teaspoon baking powder

2 teaspoons salt

Filling

¾ cup melted butter

1/4 cup brown sugar

1/4 cup sugar

2 1/2 tablespoons ground cinnamon

Bananas Foster Sauce

1 Stick salted butter

½ cup brown sugar

¼ cup bourbon

4 bananas, halved then cut lengthwise

Directions​

In a large bowl, whisk together warm milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.​ Add the yeast and let hangout for 1 minute.​ Add 4 cups of the flour to the milk mixture and mix with until just combined. Cover with a towel or plastic wrap and set in a warm place for 1 hour to let it rise.

Remove the towel and add the remaining flour, mashed bananas, salt and baking powder. Mix well, then turn out onto a well-floured surface. Knead the dough gently, adding some more flour if the dough is too sticky (sticking to your hands and surface) and knead a bit more.​ Roll the dough into a large rectangle, about ½-inch thick.​​​

Mix together the melted butter, brown sugar, sugar and cinnamon for the filling. Pour the filling mixture over the dough using a rubber spatula to spread it out evenly.​

Carefully roll the dough into a log and place seam-side down.​ Cut the log in half, then cut each half in half until you have about 12 rolls.​

 Lightly grease a 13"x 9" baking pan with butter. Arrange rolls cut side up in the pan, cover and let rise 30 minutes.

 

​ Preheat oven to 375.

 

Uncover rolls and place in oven for 20-25 minutes

 

Bananas Foster Sauce

 

Directions:

Melt the butter in a skillet over medium heat. Add the sugar and cook, stirring, until the sugar dissolves. Once dissolved add the bananas and the bourbon to the pan. Cook the sauce for about two minutes or until the bourbon is hot, then tip the pan slightly towards you or use a wand lighter to ignite the bourbon. Once the flames die down stir in the cream and cook on low for 1 minute. Spoon the sauce over the cinnamon roll, enjoy.
