Cardamom Cranberry Scones w/ saffron honey

2 cups of all-purpose flour plus more for dusting

1/2 cup of sugar 

½ teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

½ teaspoon cardamom

1 stick of cold butter cut into small cubes

1 cup dried cranberries (optional)

2 eggs

2 teaspoons vanilla

¼ cup heavy cream (plus more for brushing)

½ cup honey

1 teaspoon saffron

 

Whisk all the wet ingredients together and in a large bowl mix all the dry ingredients together. Using a fork or pastry cutter, cut the butter into the dry ingredients. Add the wet to the dry ingredients and mix until combined. Place ingredients on a floured baking sheet and form into two discs. Cut the discs into wedges (like little ole bitty pizzas) and brush with the cream. Place in the fridge for 30 minutes.

 

Pre-heat oven to 375

 

While the scones are chillin, place the honey in a small pot over low heat. Once warm add the saffron and stir. Simmer on low 1-2 minutes.

 

Remove the scones from the fridge and bake for 20-25 minutes or until golden brown. Drizzle with the saffron honey.
