Chocolate Stout Bison Chili


1 pound ground bison, beef or turkey

1 cup beef stock

3 cloves garlic, chopped

1 small onion chopped

1 green pepper chopped

1 can stewed tomatoes

1 8-ounce can tomato sauce

2 1/3tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon ground oregano

¼ teaspoon curry powder

1/2 teaspoon salt

1 teaspoon pepper

¼ teaspoon garlic powder

¼ teaspoon onion powder

½ teaspoon red pepper flakes

1 bay leaf

One 15-ounce can kidney beans, drained and rinsed

12 ounces chocolate stout beer

Shredded Asiago, for serving


Season the ground meat with salt, pepper, oregano and chili powder and brown in a skillet over medium heat. Drain off the excess fat and then place in a large pot. Add beef stock, onions, bell pepper, garlic, cumin, oregano, garlic powder, onion powder, salt and pepper, bay leaf, beans, stewed tomatoes, tomato sauce and 2 tablespoons of the chili powder. Stir together and simmer on low uncovered for about 20 minutes stirring every five minutes or so. Add the beer, remaining chili powder and red pepper flakes. Simmer for another 20 minutes stirring every five minutes. Serve with shredded Asiago. Feel all cozy inside.
